Vegetable Soups

The history of vegetable soups many historians believe dates back to prehistoric times. Historians trace the history of soup to as far back as 6,000 B.C. Although boiling was not a common method of this time, a common practice entailed heating the stones next to a fire before placing them in the water. One thing that remains a mystery is how people did not burn themselves while transporting the stones.

Boiling did not become common practice until the invention of waterproof containers. This did not occur until around 9,000 years ago. In most cases, waterproof containers consisted of pouches such as clay or animal skin. During this time, clay pots became more common and made cooking a little easier.

Often, this would involve the placement of a pot above a fire in which women would fill with water for boiling. At the time, some of the people cooked on a hearth placed within the home, while others continued cooking duties in the outdoors.

Soups generally consisted of a broth or liquid. Initially, the word soup originated from the French word soupe derived from the Latin word suppa, which means bread soaked in broth. Minestrone soup refers to the Italian form of vegetable soup. Vegetable soups may take many forms.

In some cases, the soup consists of a thick base, while in others it may be more liquid. In the past, the soup's ingredients usually depended on the type of vegetables the people had grown. In addition, the ingredients would often depend on the season as well.

Some soups included such things as grated cheese, while others used oats as a thickener. People would also use things such as rice in order to make the soups heartier. Very rarely, did people without money have the luxury of including meat in their diet.

In some cases, people with money enjoyed a diet with meat, but rarely ate root vegetables. One reason for this had to do with how the root vegetables were considered only fit for ordinary people. During this time, people were unaware of the nutritional value that came from the root vegetables. Instead, they concentrated more on where the vegetable came from.

Since the root vegetables came from the ground they considered it fit for only peasants since soups made of vegetables were cheaper for people without money to make. Most of the time, adding meat cost people a lot more and is the reason most without the financial means ate a diet consisting mostly of vegetables, bread, and cheese.

In the past, people rarely used the term vegetable though. Throughout the middle ages, vegetables were commonly referred to as herbs. In most cases, the vegetables referred to as herbs consisted of a green color. Many of the vegetable soups were made of only a few ingredients and referred to as pottage soup. In most cases, the soups concentrated on one vegetable as the main ingredient. Often, these soups consisted of leek, cabbage, and potato.
