Vegetable Chili Recipe

Vegetable chili recipe is an amazing way to get the kiddos to eat their vegetables. Vegetables are rich in fiber as well as other vital nutrients that growing kids need. You can take this meal in a cup with you on camping trips or pack it into a thermos, and your kids will be the envy of the lunchroom without even knowing that they are eating something that is good for them, unless of course you tell them.

No one said that chili had to include some kind of meat, even though most of it does. When you whip up a tasty pot of chili using this vegetable chili recipe, you are sure to be the hit of the neighborhood. You may even have parents sending their kids to your house in order to get them to eat their veggies. Just be sure you have several copies of the recipes prepared to tuck into their pockets to send home with them when they go. You want to share all the goodness with your friends, but you may want to come to their house some time in the future to see if they can make it as good as yours.



INGREDIENTS

2 cans kidney beans (rinsed)

1 large sweet onion (chopped)

2 cloves garlic (minced)

1 can (28oz) tomatoes (not drained, chopped)

1 can (4 oz) green chilies (chopped)

2 carrots (shredded)

1 tbsp chili powder

1 tbsp ground cumin

1 tbsp dried oregano

1 tbsp paprika

2 tsp salt

1/2 tsp cayenne powder

DIRECTIONS

1. Place kidney beans in large sauce pan.

3. Add onion, garlic, tomatoes, chilies, carrots and spices.

4. Simmer, covered,stirring occasionally,for 2 hours or until beans are tender. Serve with shredded cheese to garnish.
