Shrimp Bisque Recipe

Shrimp bisque recipe may sound a bit intimidating. It can also seem like a fancy dish to serve. However, just one look at the ingredients list and you are sure to realize that this is really a simple dish to prepare, and one that your family or guests are sure to savor.

Bisque is a cream based soup variety, and traditionally made with some type of tomatoes, in this case tomato paste. This renders a lovely pink color to the base. It is also primarily created around a shellfish theme using meats like crab, crawfish or shrimp.

Most cooks realize that there is just no way that they can make too much of this wonderful soup. What is different about this shrimp dish is that you will not be throwing the shells away. They will be pureed and added back into the soup to give it a lovely pink color.

While there are a few extra steps needed to make this shrimp bisque recipe, it is well worth the effort when you see smiles of pleasure from those you love as they enjoy every bite of this taste tempting delicacy. Serves 4 and don’t forget the crusty bread and salad.



INGREDIENTS

1 lb cooked shrimp (in shells)

2 tsp olive oil

2 lg onions (halved and sliced)

1 carrot (grated)

1 stalk celery (sliced)

2 garlic cloves (crushed)

6 1/4 cup water

1 bay leaf

2 tsp butter

6 tbsp white rice

1 tbsp tomato paste

salt and pepper

DIRECTIONS

1. Peel shrimp and save shells. Set aside shrimp flesh in refrigerator. Heat oil in large sauce pan add shrimp shell and cook over high heat until they brown. Reduce heat and add one onion, carrot, celery, and garlic cover and cook for 4-5 minutes stirring frequently until onion softens.

2. Add water and bay leaf with a small amount of salt. Bring to boil. Reduce and simmer for 25 minutes. Strain shrimp stock. Heat butter in large sauce pan over medium heat and add other onion. Cover and cook for 5-6 minutes. Stirring frequently until onion is soft and starts to color.

3. Add shrimp stock, rice, tomato paste bring to boil. Reduce heat and simmer for 30 minutes until rice is very soft. Let cool slightly then puree in blender or food processor. If using a food processor drain off liquid and save. Puree solids with a little liquid to soften. Then combine with other liquid.

4. Return to a sauce pan place over medium heat. Add shrimp simmer for about 8 minutes adjust seasoning to taste and serve
