Mushroom Soup Recipe
Mushroom soup recipe can be made with a mixture of your favorite mushrooms or you can use just one single kind. INGREDIENTS2 tbsp butter 1 tbsp oil 1 onion (roughly chopped) 4 potatoes (9-12 oz roughly chopped) 12 oz favorite mushrooms 2 garlic cloves (crushed) 2/3 cup white wine 5 cups chicken stock bunch of parsley (chopped) salt and pepper to taste
DIRECTIONS 1. Heat butter and oil in a sauce pan over medium heat. Add chopped onion and turning until well coated. Stir in potatoes cover and sweat for 10 minutes on low heat. Until soft but not brown. 2. Add mushrooms, garlic, and white wine along with stock. Cook for 15 minutes until all ingredients are tender. 3. Put mixture in blender or food processor and blend. Return to clean pot add 3/4 of parsley bring back to boil season and serve with remaining parsley as garnish.
