Lobster Bisque Soup Recipe

Lobster bisque soup recipe is the perfect way to address a cold winter night. If you enjoy curling up with a good book and a warm dinner this recipe will fit the bill. It seems that bisques originally saw their beginning in France, and they are close relatives to chowders. The difference is that bisques are smooth while chowders have chunks of ingredients floating around in them.

Lobster bisque is a delicious and velvety soup, and in this case is made with a fresh fish stock and heavy cream along with fresh vegetables and long grain rice.

INGREDIENTS

1 1/4 lb lobster meat (cut into pieces)

6 tbsp butter

1 onion (chopped)

1 celery stick (chopped

1 carrot (diced)

1 cup white wine (dry)

4 cups fish stock

1 tbsp tomato paste

1/2 cup heavy cream

1/2 cup long grain rice

salt and white pepper to taste

DIRECTIONS

1. Melt 1/2 butter in a large sauce pan add the vegetables and cook over low heat until soft. Put in the lobster meat and stir gently until lobster turns red.

2. Add wine and boil until reduced by half. Pour in the stock and simmer for 2-3 minutes remove lobster.

3. Stir in tomato paste and rice and cook until rice is tender. Remove lobster meat and dice then set aside. When the rice is fully cooked Transfer the mixture to a food processor or blender and puree.

4. Press the puree though a fine strainer over clean pan. Heat until almost a boil. Season with salt and pepper then lower heat and stir in cream. Dice remaining butter and whisk into the bisque. Add lobster meat and serve.
