INGREDIENTS2 medium potatoes, peeled and diced 1 cup water 4 tablespoons chopped onion 2 tablespoons butter 2 tablespoons all-purpose flour 3 cups whole milk 1/2 teaspoon salt 1/2 teaspoon pepper
DIRECTIONS 1. In a saucepan bring potatoes and water to a boil over medium-high heat. Cover and cook until tender; drain and set aside. 2. In the same sauce pan, saute onion in butter until tender. Stir in flour until blended. Add milk and bring to a boil; cook and stir for 2 minutes or until thickened. lower heat; add the potatoes, salt and pepper to taste. 3. Transfer to a blender or food processor and blend until smooth you may need to do this in batches. Return to clean sauce pan and warm over low heat for 5 minutes. Stir in cream and cook for another 2 minutes. serve
