Cream Of Potato Soup Recipe

Cream of potato soup recipe will have you wondering why anyone would ever use a mix or pour it out of a can. Fresh, tasty potato soup is simple to make all by yourself. With the sweet taste of onions sautéed to perfection. the combination of flavors that are combined will make this a great soup.

You are sure to want more of it When you wrap all of this together with a generous portion of potatoes and whole milk. You have a taste tempting treat that cannot be denied.

One of the tricks for having a wonderful mixture of textures is to mash up some of the potatoes. You can decrease the amount of fat if you feel it is necessary by using skim milk instead of whole milk. Otherwise you will get the same rich flavor and just a bit less calories.

If you use a blender to cream the soup, be sure to only fill the container half way. Secure the lid in place to prevent the hot mixture from spilling over. A hand held immersion blender will do the same thing if you have one.



INGREDIENTS

2 medium potatoes, peeled and diced

1 cup water

4 tablespoons chopped onion

2 tablespoons butter

2 tablespoons all-purpose flour

3 cups whole milk

1/2 teaspoon salt

1/2 teaspoon pepper



DIRECTIONS

1. In a saucepan bring potatoes and water to a boil over medium-high heat. Cover and cook until tender; drain and set aside.

2. In the same sauce pan, saute onion in butter until tender. Stir in flour until blended. Add milk and bring to a boil; cook and stir for 2 minutes or until thickened. lower heat; add the potatoes, salt and pepper to taste.

3. Transfer to a blender or food processor and blend until smooth you may need to do this in batches. Return to clean sauce pan and warm over low heat for 5 minutes. Stir in cream and cook for another 2 minutes. serve
