Cream of Asparagus Soup Recipe

Cream of asparagus soup recipe is at its best when you make it with the larger variety of asparagus that has long stems. This size asparagus will provide greater flavor in this creamy soup. You will also find that the stock used in this recipe should be from a good vegetable or chicken base.

Many people consider asparagus growth to be a signal that the growing season has just begun because it is one of the first vegetables to raise its lovely head. It is not hard to imagine that most of us love it sautéed in butter, but it is also lovely when you create a nice soup with it.

When you are buying asparagus, you want to look for firm bright stems that have no wrinkles. The heads should also be tightly closed and may exhibit a slight purplish color. The color will fade to nearly white at the bottom ends.

You are sure to enjoy this cream of asparagus soup recipe which includes white rice, bay leaf the vegetable or chicken stock of your choice, and heavy cream. You can season it to taste with salt and black pepper, but remember to take your time and enjoy it to the fullest.



INGREDIENTS

12 oz asparagus

2 tsp butter

1 onion (halved, sliced)

1 leek (sliced)

4 tbsp white rice

4 cups chicken or vegetable stock

1 bay leaf

1 cup heavy cream

salt and pepper to taste

DIRECTIONS

1. Remove and discard woody bases of the asparagus. Using a vegetable peeler peel the asparagus stems. Cut off the tips and set aside. Chop the stems in to small pieces.

2. Bring a small pot of salted water to boil and drop in asparagus tips cook for 1-2 minutes until bright green and barely tender.

3. Heat butter in a large sauce pan over medium heat and add onion and leek. cook for 3-4 minutes. Stirring frequently until onion is soft.

4. Add asparagus steams and rice, stock, and bay leaf with a pinch of salt. Bring to boil reduce heat and simmer for 30-35 minutes. When rice and vegetables are real soft remove from heat discard bay leaf.

5. Allow soup to cool slighty then pure'e until smooth using a blender or food processor.

6. Return to a clean sauce pan place over medium-low heat. Stir in tips then cream ajust seasoning simmer for 5-10 minutes until heated through stirring occasionally. then serve
