Chicken Dumpling Soup Recipe

Chicken dumpling soup recipe. Who hasn't spent their time working on a good bowl of dumpling soup? This is one of the all-time favorite soup recipes, right next to chicken noodle soup. If you had to choose which your favorite was, you are probably like me; it would be hard to do. I love chicken in just all types of ways. I love it fried, baked, boiled, and I like it in stews, soups and any other way you can make it. When it comes to soup, I really love chicken dumpling soup.

You will find as you read through this chicken dumpling soup recipe that it is made with fresh ingredients along with a great chicken stock. By the way, you can find a good recipe for chicken stock right here on this website by using the navigation menu at the left under soup stocks.

I like chicken dumpling soup made with a variety of different vegetables including carrots, celery and leeks. Green peas are a great addition, but I don't always stop with the ones that are mentioned in this recipe. If you are like me, you will find other vegetables to add that are as good.



INGREDIENTS

SOUP

5 oz cooked chicken (sliced)

6 cups chicken stock

2 sm carrots (finely sliced)

1 celery stalk (finely sliced)

1 sm leek (thinly sliced)

4 oz green peas (thawed)

2 tsp tarragon (chopped)

1 tbsp fresh parsley (chopped)

salt and pepper to taste

DUMPLINGS

2/3 cup flour (all purpose)

1/3 cup milk

1 tsp baking powder

1 tbsp oil

1 tsp thyme (dried)

pinch of salt

DIRECTIONS

1. Place chicken stock in a large sauce pan and add carrots, celery, leek bring to a boil. Reduce heat to low and simmer gently partially covered for 10 minutes.

2. Stir in peas, and chicken and continue cooking for another 10-15 minutes until vegetables are tender.

3. For dumplings, combine flour, baking powder, thyme, and salt in a small bowl. In another small bowl combine milk and oil. Stir in flour mixture until a soft dough forms. Drop by teaspoons into soup and simmer covered for 15 minutes or until a toothpick inserted in a dumpling comes out clean.

4. Add tarragon and parsley adjust seasoning and serve
