Chicken Broth Recipe

Chicken broth recipe is not an arduous undertaking, but it is a bit more involved than popping the lid off a store-bought container. When it’s finished though, you will have something akin to a gift fit to serve to friends and family. Once you have this one mastered, you will have the cornerstone in place for other great homemade soups.

Chicken broth is a flavorful soup in a clear base. When you have a good chicken stock to work with, you can be sure that you will have the finest consommé possible. There is a trick to creating clear consommé, but this chicken broth recipe will take you through every step. One of the keys to getting a great result is beginning with ground chicken, and of course, you cannot forget the benefits of using egg white protein to fashion a clear but rich soup.

This is a very simple recipe to follow, and many of the good for you ingredients are already right there in your kitchen. You may have to make a special trip to the grocery store for ground chicken and for that bouquet garni, but chances are the rest are right there waiting for you to offer to place them in this incredible dish.



INGREDIENTS

5 cups chicken stock

1 cup ground chicken

2 tomatoes (peeled, seeded, and chopped)

2 large carrots

1 lg onion (chopped)

2 clery stalks (chopped)

1 bouquet garni

2 egg whites

salt and pepper to taste

DIRECTIONS

1. Place ground chicken and stock in a large sauce pan and set aside for 1 hour. Then add tomatoes, carrots, onion, celery, bouquet garni, 2 egg whites and plenty of seasoning. Bring almost to a boil whisking hard with a flat whisk.

2. Cover and simmer for 1 hour. Do not allow the foam at the top to break up.

3. Pour the soup through a colander lined with 2 layers of cheese cloth. Hold back foam to the end and discard. Then repeat the process again to a clean sauce pan.

5. If the clarity of the soup does not meet your approval place another egg white and repeat the whisking part again as before. Then boil for 10 minutes and strain again.

5. the soup is ready to serve.
