Cauliflower Soup Recipe

Cauliflower soup recipe is an amazingly wonderful soup that you can serve for any occasion. All you need to make it even better is to begin with a flavorful vegetable stock. Did I mention that you can find a recipe for one of those right here on this site using the navigation menu at the left?

I'm sure you have noticed the millions of vegetable soup recipes that grace the pages of websites all around the web. Most of these are pretty much the same, and you can spend hours going through the pages upon pages trying to find one that is truly different. What you have to remember when you are mixing up your own is not the ingredients that are used, but the way they are combined.

Here is a cauliflower soup recipe that you will not have to guess whether it will be worthy of your family or not, you can be sure that if you follow the directions provided here your family will eat it right up with no questions asked.

Use grated cheddar cheese for garnish, and serve with salad and crusty bread and your family or guests will be hooked on this delicious meal.



INGREDIENTS

1 tbsp olive oil

2 tbsp butter

1 lg onion (coarsely chopped)

2 leeks (sliced)

1 largee head cauliflower

4 cups vegetable stock

salt and pepper to taste

DIRECTIONS

1. Heat olive oil and butter in a large sauce pan over medium heat. Add onion leeks and cook for 10 minutes until softened but not browned stirring frequently.

2. Cut cauliflower in florets and cut the stalk into small piecies. Add to the pan and saut'e with other vregetables for another 2-3 minutes.

3. Add stock and bring to a boil reduce heat to medium and cover simmer for 20 minutes.

4. let cool slightly then pour into food processor or blender in batches. porcess until smooth return to a clean sauce pan.

5. Heat through season to taste and serve.
