Here is a cauliflower soup recipe that you will not have to guess whether it will be worthy of your family or not, you can be sure that if you follow the directions provided here your family will eat it right up with no questions asked. INGREDIENTS1 tbsp olive oil 2 tbsp butter 1 lg onion (coarsely chopped) 2 leeks (sliced) 1 largee head cauliflower 4 cups vegetable stock salt and pepper to taste
DIRECTIONS 1. Heat olive oil and butter in a large sauce pan over medium heat. Add onion leeks and cook for 10 minutes until softened but not browned stirring frequently. 2. Cut cauliflower in florets and cut the stalk into small piecies. Add to the pan and saut'e with other vregetables for another 2-3 minutes. 3. Add stock and bring to a boil reduce heat to medium and cover simmer for 20 minutes. 4. let cool slightly then pour into food processor or blender in batches. porcess until smooth return to a clean sauce pan. 5. Heat through season to taste and serve.
