INGREDIENTS14 oz broccoli (from large head) 2 tsp butter 1 tsp oil 1 onion (finely chopped) 3 tbsp wite rice 3 3/4 cups water 1 bay leaf 4 tbsp heavy cream 3 cups white cheese (shredded) salt and pepper to taste
DIRECTIONS 1. Seprate the florets from the stems. Use a vegetable peeler and peel the large stems and chop all the stems into small pieces. 2. Heat butter and oil in a large sauce pan over medium heat and add onion. Cook for 3-4 minutes, stirring frequently until the onion is soft. 3. Add broccoli stems, rice,water, bay leaf, and a pinch of salt. Bring to boil and reduce heat to low . Cover and simmer for 15 minutes. Add the broccoli florets and continue cooking, covered for 15-20 minutes, until rice and vegetables are tender. Remove bay leaf. 4. Stir in cream and cheese season with salt and pepper simmer over low heat for a few minutes until heated through, stirring occasionally check seasoning and serve.
