Asparagus Soup Recipe

Asparagus soup recipe makes up into an elegant simple to make soup. This asparagus soup recipe is chock full on wonderful nutrients like foliate which is the B vitamin that is known for preventing heart disease. INGREDIENTS

2 pounds asparagus (trimmed)

1 tsp butter

1 tbsp oil

2 leeks pale green and white parts only (rinsed and finely chopped)

1/2 onion (finely chopped)

2 garlic cloves (minced)

3 tbsp long-grain white rice

5 cups vegetable or chicken stock

1/2 tsp dried tarragon (crumbled)

salt and pepper to taste

DIRECTIONS

1. Slice tips from asparagus. In a medium sauce pan, blanch in boiling water for 1 minute, drain and coarsely chop remaining asparagus.

2. melt butter and oil in a large sauce pan over medium heat. Add leeks, onion, and garlic and cook for 5 minutes or until softened. Add chopped asparagus and cook, covered, for 10 minutes.

3. Add rice, stock and salt and pepper bring to a boil, then reduce and simmer for 30 minutes. Remove from heat and let cool slightly.

4. In batches to a food processor or blender puree until smooth return to pan, stir in tarragon and asparagus tips and simmer for 3 minutes. Remove from heat and serve.
